For Lemon Icing:

cup powdered sugar

tbsp water

tbsp lemon juice

cup milk powder
Preparation
Introduction:
Lemon cookies are delectable snacks that can be prepared in a jiffy.
Steps Involved:
This is a two-step process, the preparation of the cookie and the lemon dressing to be piped on them.
Cookie preparation:
Sieve flour, baking powder and salt together in a bowl and keep aside.
Whip butter, sugar, egg and condensed milk in a bowl to a smooth, creamy consistency. Add in lemon juice, lemon rind, vanilla essence and incorporate into the mixture. Now incorporate the flour mixture here, stir well and prepare smooth dough.
Divide the dough into 2 to 3 balls, wrap the balls in cling film and set aside in the refrigerator for an hour to cool down.
Preheat an oven to 175 degree Celsius.
Using a rolling pin, roll out the balls and flatten into 4cm thick sheet, use desired shape cookie cutters and cut them into heart, diamond, club shapes etc. Bake these cut shapes in the oven for 10 to 12 minutes.
Keep the baked cookies aside to cool down.
Lemon icing preparation:
Mix icing sugar, milk powder, lemon juice with water to prepare a paste.
Put the paste in a piping bag and pipe out artistic designs on cold cookies.
Store these cookies in air tight containers to keep them crisp.
