kg mutton, cut into 2 inch pieces

tbsp chilli powder (Kashmiri)

tsp garam masala powder

tbsp coriander powder

tsp fresh pepper powder

cloves

cardamom

inch cinnamon piece

tbsp fresh cream
Chopped coriander for garnishing

Preparation
Introduction:
Rogan Josh is a signature dish of Kashmir and is believed to have some Persian influences. This aromatic and flavoursome dish also has the rich red hues of the Kashimiri chilli.
Steps Involved:
Marinate the mutton pieces with curd and salt and keep aside for 1 hour.
Keep a pan on medium heat and add the Noor Oil to it. When it is hot, add the whole garam masala (cloves, cinnamon and cardamom) to it and wait till it starts crackling.
Now add onions and sauté till light brown.
Add the ginger garlic paste to this and stir well for a minute so that the paste does not stick to the pan.
Add the coriander powder, chilly powder, cumin powder, pepper powder, turmeric powder and the garam masala powder and keep stirring for 2-3 minutes.
Add the mutton pieces and cook on low heat. When the meat is cooked, add the cream and cook for 2 minutes.
Garnish with coriander leaves and serve hot.
