Pumpkin disguises itself in this stew by being the thickening agent – making this stew creamy and delicious.
In a big pot, on medium-high heat, heat Noor Oil
Add onions, garlic, and ginger and cook until softened.
Add zucchini, okra, canned tomatoes and pumpkin.
Mix well and add water, cilantro and spices.
Reduce to a simmer and cover, mixing occasionally.
Cook for 20 minutes.
