Ingredients

3 eggs (separated egg white and yolks)

1 ½ cup yoghurt

1 tsp baking soda

1 ½ cup all purpose flour

1 tsp sugar

½ tsp salt

3 tbsp  softened butter

2 bananas (sliced thinly)

¼ tsp  lime juice

1 tbsp powdered sugar

Whipped cream as needed

Preparation

Introduction:

The ideal tea time snack that is easy to make and takes no time at all.

Steps Involved:

Mix all the ingredients namely the egg yolks, yoghurt, baking soda, all-purpose flour, sugar, salt and softened butter to form dough.

Whip egg whites well till it form peaks. Now fold the whipped egg whites into the dough.

Place a non-stick pan on medium heat. Pour 2 tablespoons of the resulting batter on a flat bottomed non-stick pan and spread them into thick pancakes.Cook the pancakes on both sides until done.

Place another pan on fire under medium heat, melt one tablespoon of butter and add in the thinly sliced bananas. Cook for 2 minutes, add the lime juice and take it off the flame.

Whip the cream with 1 tablespoon of powdered sugar and keep aside.

When serving, fold some sweetened whipped cream on top of each pancake, place some sautéed banana slices on it. The Fluffy Banana Pancake is now ready to be relished.
