gm pumpkin cleaned and diced
medium leek sliced
medium potatoes skinned and diced
cups vegetable stock or chicken stock
tsp cayenne pepper
tsp lemon juice
cup fresh cream
tbsp Noor Oil
A smooth yet hearty soup with the goodness of pumpkins and potatoes.
Take a thick bottomed pan, add the Noor Oil and on medium heat saute the pumpkin, leek & potatoes for about 5 minutes.
Add the stock to this and continue on medium heat till it boils. Then lower the heat, close the pan and allow it to simmer for about 15 minutes.
Take the cooked mixture from the heat and puree it well. Add the pepper and lemon juice to it.
Season with salt and pepper. Garnish with fresh cream and serve hot with garlic bread.
