small onion, chopped

g cauliflowers, roughly chopped
orange bell peppers, chopped
g baby potatoes, cut into quarters
cups vegetable stock
bunch coriander, chopped
tbsp coconut, creamed
tbsp Noor Oil
This is a delicious and vegetarian-friendly dish. Can be made with any vegetable you have at home – it’s delicious, quick and light.
Heat Noor Oil in a sauce pan on a medium heat.
Gently fry the onion and garlic.
One softened, add spices.
Add cauliflowers, orange bell peppers, tomatoes, and potatoes.
Add 2 cups vegetable stock, cover the pot and simmer for 20 minutes.
Add the fresh coriander, yogurt and creamed coconut.
Cook for another 5 minutes.
