cups cooked quinoa
cloves of garlic, chopped
small onion, chopped
boneless chicken breast, strips
gm feta cheese, crumbled
tbsp lime juice
Quinoa is the new super food, and this dish incorporates it beautifully, with the tangy flavor of feta cheese.
Heat Noor Oil in a frying pan. Gently fry onion and garlic until soft.
Add chicken strips and cook.
Add zucchini and tomato.
Continue cooking until chicken is cooked through and vegetables have softened.
Add feta cheese and lime juice; mix carefully and remove from heat.
Serve on top of quinoa.
