yellow capsicum (chopped)

Chop and mix tomatoes, capsicum, spring onions, garlic and parsley with olive oil, salt and pepper.
Line a roasting pan with Noor Oil, place the fish on it with the fleshy side up. Pour the vegetable mixture to completely cover the fish and roast it covered in aluminum foil for 25 min.
Now remove the foil; pour in the lemon juice and grill it for another 10 min. Your Spring Fish is now ready to be served.
Serve it with some fresh bread and enjoy the medley of flavours bursting with spring.
