A strawberry cheese cake is perfect for any special occasion. Try baking this creamy, delicious cheese cake and you will fall in love with it!
Mix biscuit crumbs, sugar, and powdered cinnamon along with butter in a bowl. Prepare dough and roll into a thin sheet.
Line an ungreased 9 inch springform pan with this thin layer that was rolled out. Leave this lined pan in a refrigerator for 30 minutes to cool down and set.
Preheat oven to 150°C.
Blend the strawberries with cornstarch and make it into a smooth puree. Pour this purees into a saucepan and bring to boil over a high heat constantly stirring for 2-3 minutes and the resulting sauce is thick and shiny.
Transfer one third of the strawberry sauce prepared into a cup and set it aside.
Store the remaining strawberry sauce in a refrigerator, for serving later. If found to be too thick in consistency at the time of serving, stir in some water to loosen it.
Whip cream cheese in a mixing bowl with an electric mixer until light and fluffy; gradually incorporate the condensed milk, lemon juice, vanilla essence and eggs on low speed until combined to form the cream cheese mixture.
Take the lined and refrigerated springform pan; pour the cream cheese mixture and the strawberry sauce on to it. Use a knife to gently swirl on the strawberry sauce to form a pleasing pattern on the combined mixture, making sure this action does not cut or puncture the base lining.
Place the pan with the strawberry cheese cake mixture in the preheated oven and bake for 45 to 50 minutes. Once done, remove it from the oven and let it cool on a wire rack for 10 minutes.
Carefully run a knife around the edge to loosen around the edges of the cake and refrigerate overnight. Delicious cheese cake slices can now be enjoyed served with refrigerated strawberry sauce.
