cup tomato sauce
medium white onion, chopped
small onion, sliced into rings (for garnish)
red bell pepper, cut into strips
medium ginger, cut into strips
small carrot, cut into strips
Salt and pepper to taste
cup Noor Oil for deep frying
The sweet and tangy flavours of this saucy fish preparation will delight even a picky eater.
Make a few gashes on the cleaned Tilapia. Marinate Tilapia fish with salt, pepper and lime juice for 10 minutes.
Heat Noor Oil;in a deep fry pan to a medium heat.
Fry the tilapia fish until cooked and crispy.
Drain the fish on a paper towel and keep aside.
In a separate pan, sauté garlic, onion, carrots, ginger, and bell pepper.
Add ¼ cup of water and simmer for about 5 minutes.
Pour 1 cup tomato sauce and vinegar; mix thoroughly and simmer for a few minutes. Check to ensure a slightly thick, pouring consistency for this sweet and sour sauce.
Place fried fish on a serving platter.
Pour the sauce prepared above on top of the fish and garnish on top with onion rings.
Best served hot with plain white rice. Enjoy!
