Preparation
Introduction:
This salad is so easy to prepare and calls for just a handful of ingredients. A little bit of garam masala sprinkled at the end, takes this simple salad to another level. It can be served as an accompaniment to a main dish or eaten on its own.
Steps Involved:
Sprinkle turmeric and half teaspoon of salt over the diced eggplant and toss well, coating evenly. Heat the Noor Oil in a deep frying pan and fry the cubes of eggplant in batches, till golden brown. Drain on kitchen paper and set aside.
Combine the diced tomatoes, onions and green chillies in a bowl and add the soy sauce, a squeeze of lime and the remaining salt (as required). Give it a good toss. Add the eggplant and toss gently. Finally sprinkle over the garam masala and finish it with a final toss.
Serve immediately.
