large onion (finely chopped)
cups yellow lentils
cups of chicken stock, vegetable stock or water
tsp cumin (ground)
tsp coriander (ground)
Pinch of cayenne pepper
tsp freshly ground pepper
Juice of 1 lemon
Salt to taste
tbsp Noor Oil
This steaming bowl packed with tastes and nutrition is a beautiful start to any meal. Serves as a comforting companion during cold winter nights or a great source of energy for a warm summer evening!
Add Noor Oil to a deep pan and sauté the onions till they are soft. Add salt and black pepper.
Add ground cumin and coriander and sauté for half a minute.
Add red lentils and stock and cook on high heat till the lentil mixture starts boiling. Then reduce the heat to low and cook covered for around 30 minutes till the lentils are well cooked.
Stir the soup at regular intervals to ensure that it does not stick to the pan. Take off the heat and cool.
Puree the mixture with a hand blender till it is smooth. Add cayenne pepper, salt and lemon juice.
Serve hot with garlic bread.
