cups raw unsalted cashew nuts

ml Noor Oil

tsp chilli powder

tsp ground black pepper

tsp salt
4-5 cloves of garlic, sliced
handful of fresh curry leaves

Introduction:
These tasty spiced cashews are perfect companions for a long cool drink and are wonderful to serve at a casual get together with friends. It is a fuss free snack to serve with drinks, but has a wonderful savoury taste that your guests will find it hard to refuse – upon trial, it is pretty addictive. You can make a child friendly version by omitting the chilli powder and pepper in the preparation. Add some zing to plain old cashews, serve them in colourful bowls.
Steps Involved:
Heat Noor Oil in a heavy bottomed pan until smokey. Add the cashew nuts and shallow fry, moving the nuts around with a slotted spoon so that they cook evenly, until golden brown. Remove the nuts and set it aside. Deep fry the garlic and curry leaves in alternate batches.
Place the fried nuts, curry leaves and garlic slices in a large bowl, add the chilli powder, pepper and salt. Toss well and combine.
Suggestion:
Spoon into colourful serving bowls and serve along with iced drinks.
