4 large  carrots, thinly sliced

100 gm pumpkin, thinly sliced

2 large  onions, finely chopped

400 ml  vegetable stock

Salt and pepper

1 tbsp soy sauce

2 tsp cumin powder

50 ml  cream

2 tbsp fresh coriander, chopped

Soup is considered by many as a comfort food and it is indeed! When prepared the right way, a soup can be all you need on a cold day. When feeling under the weather, this soup is sure to cheer you up!

Steps Involved:

For a soup full of flavor, roast the vegetables in the oven before preparing the soup. So preheat the oven at 200 degree Celsius and bake the carrots, pumpkin and onion with some salt and pepper, soy sauce and Noor Oil for 15 minutes.

Now transfer the vegetables to a large pot, add the stock and let it all cook at a medium heat for another 15 minutes or until the vegetables are really soft. Add the cumin and blend until smooth.

Serve warm with a dash of cream and some fresh coriander. Enjoy!
