The star of this recipe is cauliflower, which is a fantastic vegetable to introduce into your weekly meal plans, as it has a high content of fiber and, believe it or not, vitamin C!
This recipe is a very easy one and is fantastic as a starter, vegetarian main dish or even as a side dish to be enjoyed with fish, meat or chicken!
Preheat the oven at 200oC.
Separate the small florets of the cauliflower and cut the onion into thin slices.
Now place both ingredients in an oven proof tray and sprinkle with the soy sauce, salt and pepper. Add Noor Oil and roast in the oven until the cauliflower is al dente and the onion has caramelized (this will take around 15-20 minutes).
Remove from the oven. Enjoy!
Serve hot with chopped coriander.
