medium onion, chopped

Try this recipe, hollowed out zucchini cooked with herbs, egg and gratinated with cheese. It’s a treat!
Preheat oven to 250°F.
Cut the zucchini into half and scoop out the flesh and set it aside in a bowl.
Heat Noor Oil in a pan and add onions and garlic and sauté for a minute.
Add the dried herbs, zucchini flesh and red pepper and sauté till it is cooked.
Add in the egg and stir for a few minutes.
Mix milk with the flour and add to the above to bind the vegetable together.
Add salt and pepper to taste and stir for a minute.
Take off the heat and scoop this mixture onto the zucchini holders.
Top with grated parmesan.
Gratinate in the oven for around 10 minutes.
Serve hot as a vegetable side dish for any meal.
