100 gm grated pecorino cheese

100 gm grated parmigiano cheese

2 eggs

4 eggplants

200 gm  bread

4 cups dried bread crumbs

3 cloves garlic

Pinch of pepper

Pinch of salt

Fresh chopped parsley

Noor Oil



A perfect finger food for your parties.

Steps Involved:

Clean the eggplants and cut them into halves. 

Put the cut pieces in a pan and cover them with water. Place the pan on fire. Cook them for 45 minutes.

Remove them, strain, squeeze them and allow them to cool. 

Remove the skin and cut into small pieces.

In a bowl, mix the eggplants with all the other ingredients.  

Make small balls with the mixture, and roll them in bread crumbs.

Heat Noor Oil and when it’s hot, add a few balls and fry them until they become brown.

Place them on paper towels to absorb the excess oil and serve them warm.  


You can serve eggplant balls with a delicate tomato sauce.
