For the curried shrimps pasta:

300 gm  fusilli pasta

2 large ripe tomatoes, (finely chopped)

2 red onions, (finely chopped)

1 garlic clove

1 tbsp  curry powder

200 ml  cream

1 tbsp soy sauce

150 gm  small shrimps (cleaned and deveined)

salt and pepper

Noor Oil

For apple salsa:

1 golden apple

1 tbsp fresh coriander, chopped

½ lemon



This is the perfect meal to take to work! Nutritious, wholesome and full of flavour!

It is also a perfect example of how east meets west, as it combines ingredients from classic Continental cuisine with Eastern spices.

Steps Involved:

Start by boiling an abundant amount of salty water and cooking your pasta (it generally takes about 8-10 minutes to cook fusilli, but follow the pack’s instructions). Once it is ready, strain and set aside.

While the pasta is cooking, heat up Noor Oil in a pan and sauté the onion, garlic and tomato until the onion starts turning transparent (about 10 minutes at a medium to low heat). At this point incorporate the soy sauce, salt and pepper and the curry powder. Give it a good stir and add the shrimps. Cook for 2-3 minutes before adding the cream.

Now chop the apple into small cubes and mix with the coriander. Sprinkle with lemon juice to avoid oxidation.


To plate, place a portion of pasta on each dish, cover with the curried shrimp sauce and top up with the apple and coriander salsa.
