cups day-old bread cubed
tbsp olive oil
garlic cloves sliced
For the dressing:
cup olive oil
cup lemon juice
tbsp dijon mustard
garlic cloves minced
tsp anchovy paste
For the salad:
bunch romaine lettuce shredded
gms chicken breast cooked and cut into bite pieces
Grated parmesan cheese (for topping)
Crispy croutons and lettuces leaves dressed with a tangy dressing makes an ideal starter to any meal.
Stir fry the bread in oil for a few minutes until it is brown.
Divide the lettuce leaves into 2 plates
Shred the chicken and place on top of the lettuce.
Top them with the croutons.
Mix the dressing ingredients together in a bowl.
Drizzle over the salad, top with parmesan and serve immediately.
