Preparation
Introduction:
Besan fries are a good small sized vegetarian bite option starters.
Steps Involved:
There are two steps in preparing Besan Fries, first the Chickpea fries are prepared, and secondly the Dipping Sauce.
Besan Fries Preparation:
Combine water, spice powders, salt, pepper, and olive oil in a medium saucepan and bring to a simmer over medium heat.
Gradually add in the chickpea flour, half cup at a time, whisking continuously and removing all lumps.
Once all the flour is incorporated, whisk rapidly until the mixture has a thick consistency like pancake batter and most of the lumps are evened out. Adjust heat to ensure batter does not boil and become thick.
Remove from heat after a minute and spoon into a parchment sheet lined pan, making sure to level the batter well in the pan. Place sheet pan in a refrigerator for at least one hour.
Once firm, slice into desired shapes.
For crispy fries: Add Noor Oil or olive oil to a heavy bottom pan, bring it to a medium-high temperature of about 190 degree celsius.
Cook besan fries for 3 to 4 minutes in hot Noor Oil; until golden brown. When cooked, remove fries from Noor Oil; with a slotted ladle to a paper towel lined plate and season immediately with salt and a dash of lemon.
For Honey Chilli Dipping Sauce Preparation:
Combine all ingredients under dipping sauce namely honey, roasted garlic, mustard, thyme, parsley, lemon juice, green chillies, salt and pepper in a food processor, until resulting sauce is even and thick.
Suggestion:
Serve as a side or snack with honey chilli sauce or your favourite dipping sauce.
